The Well Plated Cookbook by Erin Clarke

The Well Plated Cookbook is Erin Clarke’s first ever cookbook and I congratulate her on an incredible collection of recipes – many of which will be in my regular rotation. This book has easy to follow recipes with an amazing attention to detail. She adds things like 3 carrots (1 1/2 cups) because we all know carrots come in a many different sizes, so these measurement guidelines are very helpful. This book hosts a variety of recipes which I enjoyed making. Kudos to Erin for this treasure!!!

I loved the Kickin’ Black Pepper Pork Stir-Fry. This is an easy, flavor filled weeknight recipe that is good enough to serve to company. This meal is an absolute crowd pleaser. The noodles give comfort but at the end of the day this is still a healthy dish. I will say that this is my FAVORITE recipe in this entire book and to my friends and followers, this is a MUST MAKE.

Moving on to another hit, I fully admit that I love the Autumn Sheet Pan Sausages with Apples and Harvest Vegetables because it brings nutrition and flavor all in one pan (less dishes to wash too). This combination of sausage, apples and Brussel sprouts is a killer combo! Even my kids loved this meal and this one can be prepped ahead with chopping the day before. The night of, it comes together tastefully, beautifully, and quickly and packs a ton of flavor.

The Better-Than-a-Restaurant Baked Cauliflower Parmesan is fantastic. Soon after I made this dish I found myself craving it, so I made it again and enjoyed it as much as I did the first time. Another benefit of this recipe is that it gives you an Italian feel and flavor without pasta. This would be a perfect meal for a Meatless Monday or vegetarian meal, but also has the flexibility to be served as a side dish with meat. This recipe is fast and easy, keeping in mind there are several times during the roasting process that you have to pull the sheet pan out and put it back in the oven although, trust me, it is well worth the extra steps.

The Warm Antipasti Dip is a classic twist on the Antipasti platter that many of us serve on a board regularly to our friends and family. This my friends has everything on the board plus some extras in a hot dip. Wondering at this point why I haven’t been introduced to this sooner!!! This dip packs an amazing list of ingredients, keeping in mind that you if are out of one thing – there are so many flavors you can just move forward and add it next time. This is even greater the next day. In making it again my only advice is to chop the ingredients a bit smaller, so you get many flavors in each bite.
