Two Peas and Their Pod Cookbook
Maria Lichty’s blog Two Peas & Their Pod began after she was asked for the recipes that she and her husband used to cater their wedding. After the blog’s huge success, in 2019 they published an incredible cookbook bearing the same name as their blog. The front of this cookbook describes the culinary adventures of this family and how they came to publish this book – which is filled with so many great meals it was hard to choose which one to make first.
The Pumpkin Chocolate Chip Streusel Muffins seemed like a perfect place to start. These muffins look beautiful and are packed with sweet and savory flavor. The streusel topping takes them over the top and makes them a go-to muffin all year long.
Next is the smooth and delicious Pesto Havarti Mac and Cheese which includes Maria’s Spinach Basil Pesto taking this creamy mac and cheese to a whole new level. This dish is a nice twist on a classic cheddar recipe because it uses Havarti and/or mozzarella (I used a combination of both) and includes pesto for an added punch of flavor.
I have been so excited to share this last recipe. Those of you who know me know that I am not a fan of mayonnaise – especially when it’s in a salad. When I saw Two Peas & Their Pod’s Baby Potato Salad with Bacon recipe in this book – I just had to try it. The light vinaigrette dressing with the bacon makes this salad a winner in the taste department – hands down. The fact that there is flavor and has ZERO MAYONNAISE is another reason why I LOVE it so much. Who doesn’t want to bring a flavor filled and lighter version of the traditional potato salad to share with friends and family? This is one for the recipe box which is sure to be a crowd pleaser for any occasion.
