Michigan summers bring farm markets full of fresh vegetables, with sweet corn being my absolute favorite. During this season, one of my go to side dishes is Thomas Keller’s Creamed Summer Corn. Take any memory of corn in a can out of your mind right now- because this does not even resemble anything close to that.
This, my friends, is fresh corn kernels cut from the cob, cooked crisp in a pan with butter, a touch of heavy whipping cream combined with a few spices and herbs to kick it up a notch. It is simply summer on a plate and a side dish that will compliment any summer meal.
Corn season is in full swing and I encourage you to get out to your local farm market, buy some corn and make this delicious summer time recipe for your friends and family. It is sure to be a hit.
