In 2013 Curtis Stone published What’s For Dinner, which I have thoroughly enjoyed for many years. His book has a chapter entitled “One Pot Wednesdays”. I absolutely love this concept because it is less work, time and dishes to wash and what better day than the middle of the week to give ourselves a gift of time. One of my favorite recipes from this book is the Roasted Pork Loin with Salt, Shallots, Potatoes, Carrots and Parsnips. Easy enough to serve on a weeknight, this recipe could also make a great dinner for company or a Sunday dinner when you need a big meal with little effort.
