Bobby at Home – by Bobby Flay
Bobby at Home is the title of my next cookbook review and recipe share. There are many reasons I picked this book to share right now. This cookbook is filled with recipes that Chef Bobby Flay cooks for HIS FRIENDS and FAMILY while entertaining at HIS HOME. Right now, Americans across the country are all AT HOME cooking for the ones THEY LOVE because our favorite restaurants, bars, and movie theaters are closed during the Coronavirus crisis. (And with full disclosure, the other reason is because it holds THE BEST French Toast recipe EVER!
I am happy to share a few more recipes as we all hunker down and keep our families nourished and protected from illness. Please take this time as an opportunity to reconnect with and enjoy time spent with those around your table. Stay healthy and safe!
Let’s get right to it…the Challah French Toast with Peach-Raspberry Compote and Maple Mascarpone sounds complicated but it’s really pretty simple. I have had whipped cream-, cream cheese-, and Bavarian cream-topped French toast. Let me just say that putting Mascarpone on French toast is smart, putting Mascarpone with maple syrup on French toast is BRILLIANT! This is THE BEST French toast I have EVER EATEN ANYWHERE. Several weeks after I made this recipe, I whipped up some regular old French toast and my son asked me if we had any Mascarpone to top it off. We did! And when finished, he asked if we could have it in the fridge all the time — my answer was a resounding YES! (I have to share that this creamy cheese is also delicious on pasta with Bolognese.)
TIP: Challah bread can be hard to find so a good substitute is brioche.
Peach Raspberry Compote is just a fancy name for peaches, raspberries, lemon juice and sugar. (Out of season you can use frozen peaches.) The recipe also calls for peach liqueur which I considered optional and skipped.
Gotta love Bobby Flay whose Chicken Parmesan recipe is topped with fresh mozzarella and served with arugula adding nutrition and flavor. You can use store bought marinara to get this to the table quickly. My favorite brands are Rao’s and Newman’s Own.
