This is Not Your Mama’s Meatloaf!
I have been making this elevated meatloaf adapted from Williams Sonoma for over a decade, no closer to two. It has been one of my family’s favorites and was requested often. I usually served it on Sunday with green beans, mashed potatoes and sometimes topped it with gravy.
This hand shaped loaf filled with fresh veggies is oozing with your choice of either fresh or smoked mozzarella. No need for ketchup as a topper. This flavor packed loaf is topped with diced tomatoes which roast in the oven on top for an hour.
It can be put together ahead of time (adding tomato topping just before popping into the oven). Perfect for any night of the week and sure to take the place of any you have loved and made before. Hope you enjoy it as much as we do.
