Apple and Pear Go Anywhere Salad

Ingredients
For the dressing

sugar

lemon juice

onion
finely grated (or use food processor)

honey Dijon mustard

teaspoon
salt
canola or vegetable oil
For the Salad
1
cup
Monteray jack cheese
finely shredded
1
cup
cashews
1/2
cup
dried cranberries and cherries
1
apple
chopped
1
pear
chopped
1
head Romaine lettuce
Instructions
Dressing
Blend the ingredients and slowly drizzle in oil to desired consistency; at the end of blending, add 1 tablespoon poppy seeds and shake well.
Salad
Pour dressing over mixture, toss well and put cashews on top. When doubling/Tripling recipe mix Romaine, iceberg and spinach lettuces.
