I looked into this cookbook because I was curious about Keto. A few people in my office have had great success with this type of diet. Basically, the Keto approach to weight loss is to eat a diet that is high in protein and fat and low in carbs. This combination creates a condition called ketosis which kicks up the fat burning and creates weight loss. The forward contains a “how-to” on living a Keto lifestyle not to mention some terrific low-carb recipes — and I have tried A LOT of them.
I have to say, Keto lover or not, there are A LOT of low-carb delicious recipes in this book. Definitely a cookbook to try!
My favorite recipe in this book is the Chicken Broccoli Alfredo Bowl. I have been making alfredo for years which typically is a combination of heavy whipping cream, butter, and cheese.
This recipe actually has cream cheese in it! – this was the first time I have ever included it in an alfredo and it will not be the last. I have to say that I LOVE how creamy this sauce is. I am now a believer that cream cheese BELONGS in alfredo. It’s REALLY that good! Honestly, with chicken, a creamy sauce, and broccoli, I barely missed the pasta (although I did make pasta for the kids.)
The Tuscan Chicken is also a dish that is flavorful and comes together really easily for a weeknight meal. Butter, white wine, sun-dried tomatoes and fresh basil make this a delicious (just not low fat) dinner.
I also really like the Buffalo Chicken Dip, which is great for game day yet can be enjoyed any day of the week. Go with celery sticks over tortilla chips for a carb-free option.
Last but not least, the Sausage, Egg, and Cheese Breakfast Bake is easy and delicious. A great make ahead breakfast with 394 calories, 21.8 grams of protein, and 2.6 grams of carbs.
