Salad On a Stick
Ingredients
- 1 romaine lettuce heart about 8 ounces
- 1/2 cup mayonnaise
- 1/4 cup whole buttermilk
- 2 tablespoons lemon juice from 1 lemon
- 1/2 teaspoon black pepper
- 1/4 teaspoon kosher salt
- 4 ounces blue cheese crumbled about 1 cup
- 1 pint cherry tomatoes
- 1 medium size red onion roughly chopped
- 8 6-inch wooden skewers
- 4 cooked bacon slices, crumbled about 1/3 cup
Instructions
- Cut the romaine lettuce heart in half lengthwise. place the romaine halves on a cutting board, flat-side down, and cut into half lengthwise again. cut each quarter into 4 (2-inch) pieces to create 16 "cubes".
- Stir together the mayonnaise, buttermilk, lemon juice, pepper, salt, and half of he blue cheese in a small bowl.
- Alternatively thread the romaine cubes, cherry tomatoes, and red onions evenly onto 8 (6-inch) skewers. Place the skewers on a platter. Drizzle with the dressing. Sprinkle withthe bacon crumbles and remaining blue cheese.
