Lexi’s Clean Kitchen – by Alexis Kornblum Davidson

The beginning of a new year is a great time to be able to hit the reset button and reboot our bodies from the sins of the season. Lexi’s Clean Kitchen is a cookbook about clean eating and includes many recipes that are nut-free, dairy-free, and paleo. I would not define myself as a completely clean, paleo, or gluten free eater – at the end of the day, I am just an eater of all kinds of good food.
Why then would I choose this cookbook? Well, I like to sprinkle healthy recipes like these into my weekly menu in-between heavier meals. A salad sounds great when you had a big meatloaf with mashed potatoes meal the night before, right?!

There are two delicious salads I LOVE from this cookbook and they are in my regular dinner rotation. The first is the Sriracha Lime Chicken Salad which is a standout recipe in this cookbook. It comes together in 35 minutes. It’s healthy, flavorful and packs the perfect amount of spice. I can’t imagine anyone not liking this dish – my kids even love it. Plus, with the warm grilled chicken breast and pineapple – it feels more like a meal than a salad – very dinner worthy!

The next contender is the Chopped BBQ Chicken Cobb Salad which is also a hearty salad full of your absolute favorite ingredients like BBQ chicken, bacon, hard-boiled eggs, cherry tomatoes, and avocado and is drizzled in a creamy honey mustard dressing. With this list of ingredients… WHAT’S NOT TO LOVE?
